Back to School – Packed Lunch Ideas

School lunches. They might bring a smile or a frown to your face. Some people may go out to shops for lunch. Others might stay and eat in the school canteen. The way to win the lunch game, you ask? Packed lunches. Try these three healthy lunch ideas which you can make the night before.

 

Salmon, Quark, and Cucumber Sandwich

This sandwich, unlike most, has no added sugar whatsoever! The salmon and cucumber go so well together with the quark, and the rye bread brings the whole sandwich together.

Ingredients: (Serves 1)

  • 2 Slices Rye Bread
  • 3 Tbsp Quark
  • 2 Slices Smoked Salmon
  • 1/3 of a Cucumber

Method:

  1. Spread the quark onto the rye bread
  2. Top with salmon
  3. Slice the cucumber and place on top

 

Greek Salad

Slay the salad game at lunch with this tasty Greek salad. Again, this lunch does not have any added sugar and is mostly made up of vegetables. Tasty tasty!

Ingredients:

  • Handful Lettuce
  • 1/3 of a Cucumber
  • 1 Large Tomato
  • 75g Feta Cheese
  • Handful Olives

Method:

  1. Cut up the feta, cucumber, and tomato
  2. Place lettuce in a bowl/Tupperware and put in all other ingredients

 

Pitta, Hummus, & Veggies

A pitta and veggies would not be complete without some hummus. You can also tailor this lunch to your own preferences. You may want to change which vegetables you take with you!

Ingredients:

  • 1/2 Pitta Bread
  • Tub of Hummus (we used Tesco’s low fat hummus)
  • Vegetables

Method:

  1. Toast your pitta
  2. Cut your chosen vegetables into sticks
  3. Serve with hummus
