Egg Fried Rice

Egg fried rice has always been one of our favourite foods but if you get it from a takeaway, it is so unhealthy. By using light soy instead of dark in this recipe we’ve managed to really cut the salt and sugar down and still keep the flavour. You can swap out the veg for any other veg or add some extra veggies into it. Enjoy!


Ingredients: (Serves 3)

  • 150g Brown Rice
  • 1 Tsp Sesame Oil
  • 3 Medium Eggs
  • 3 Egg Whites
  • 3 Spring Onions
  • Handful of Sugar Snap Peas
  • Handful of Frozen Peas
  • 1 Tbsp Light Soy Sauce
  • Salt and Pepper
  • Tsp Garlic Powder



  1. Cook the rice fully according to the instructions on the packet
  2. Dice the spring onions and sugar snap peas
  3. Whisk the egg and egg whites in a bowl then add the soy sauce and sesame oil
  4. In a pan on a medium heat, add all of the ingredients apart from the bowl of egg and soy sauce
  5. Heat through and then add the bowl of egg and soy sauce
  6. Stir through until the egg is cooked
  7. Eat right away or freeze

    This recipe looks great! Do you have any calories or sat fat numbers per serving?

      Hi Gwen, the calories per serving are altered slightly depending on what vegetables you use. Using the vegetables mentioned in the recipe each serving contains only 2g of saturated fat and 260kcal. Hope this helps.
