Shaksuka

Shaksuka is the perfect meal for breakfast, lunch, or dinner. Generally we have it in the morning. Packed with protein, this quick dish will fill you up and get you ready for the day. As well as being nutritious, shaksuka is also incredibly tasty and full of flavour. Our version is vegetarian but you could also add meat such as bacon into this.

 

Ingredients: (Serves 2)

  • 400g Tin Chopped Tomatoes
  • 200g Chopped Mushrooms
  • 1 Diced Red Onion
  • Tbsp Dried Coriander
  • Tbsp Garlic Powder
  • 150g Mozzarella
  • 4 Medium Eggs
  • Tsp Balsamic Vinegar

 

Method:

  1. Add the diced onion and 4 tbsp water to a large pan on medium heat
  2. Sweat the onions until transparent
  3. Add mushrooms, chopped tomatoes, dried coriander, and garlic powder
  4. Cook for 15 minutes
  5. Add the balsamic vinegar and stir through
  6. Make 4 wells and add the eggs into each one
  7. Tear up mozzarella and sprinkle on top
  8. Cover with a lid and cook until the eggs are done until you are satisfied (we recommend around 5 minutes)
  9. Serve on toast or bread
