Satisfy your sweet tooth with these delicious and simple blondies. We use almond butter in this recipe but you can substitute it for any smooth nut butter of your choice to fit your taste. The nut butter ensures that these blondies are filled with protein and healthy fats to keep you full and satisfied. We recommend using almond butter as it gives you a vitamin E boost!


Ingredients: (Serves 6)


  • 40ml Coconut Oil
  • 100g Almond Butter
  • 1 Egg
  • 100ml Maple Syrup/Honey
  • 120g Oat Flour/Oats
  • 1 Tsp Baking Powder
  • 40g Cacao Nibs



  1. Preheat the oven to 160 degrees
  2. If you’re using oats then add them to a blender and blend until it forms a fine powder (if you’re using oat flour then miss out this step)
  3. Add the oat flour to a bowl with all the other ingredients and mix until well combined
  4. Transfer the mixture to a lined baking dish and place in the oven
  5. Cook for 25 minutes or until golden brown
