The Avocado Cookbook by Heather Thomas has amazing recipes including this one for guacamole. It’s quick and easy yet still the best guacamole both of us have ever tasted. It’s delicious on it’s own but we like to have it as a side with chilli or fajitas. This guac is also amazing with tortilla chips. We adjusted the recipe slightly to suit our preferences.

Ingredients: (Serves 2)

  • 1/4 Red Onion
  • 1 1/2 Avocados
  • 3 Tbsp Lime Juice
  • Salt and Pepper to Taste
  • 2 Tsp Chilli Flakes
  • 1 Tsp Dried Coriander
  • 1 Large Tomato


  1. Mash the avocado and very thinly dice the onion and tomato
  2. Add all ingredients
  3. Serve immediately or keep in fridge for up to 24 hours
